Chicken Meatballs Recipe

One of my go-to recipes that are not only yummy but easy-peasy to make is chicken meatballs.[/vc_column_text][/vc_column][/vc_row][vc_row][vc_column][vc_single_image image=”12751″ img_size=”large” alignment=”center”][/vc_column][/vc_row][vc_row][vc_column el_align=”justify”][vc_column_text]Method:

I prefer to sauté my onions and garlic first, but if you are time-poor, you can avoid these steps.

Grate carrot

Mix mince, carrot, onions, garlic, rice and spices in a bowl.

In a large oven dish, poor in the tin of tomatoes, tomato soup and one tin of water and mix well.

Make small balls with your mince mixture and place in an oven dish. It makes around 30 meatballs, so you definitely need a large oven dish and to place them close together in rows of 5/6 depending on the size of your dish.

If your family is not as big as mine, then you can half the mixture and place it in an airtight container or bag and freeze it for another day.

Cook in the oven for an hour on 170/180 *

You can add parmesan cheese on the top towards the end if you like. – again this recipe is versatile to suit all families taste buds.

Cook spaghetti as per packet instructions and voila’ you are ready to eat.
